Greek Coffee – beverage with oriental character
The Italians have a coffee for the man in a hurry. Espresso is just a tiny quantity of coffee served in no time for a customer who will leave the place in the next few minutes. The Greek Coffee is quite the opposite. It’s a coffee brewed for several minutes in a traditional cooking appliance called chovoli and served in a briki, a small tall boiling pot. The customer, who has enough time to stay and enjoy his coffee, pours slowly the content of this pot in his cup and then he sips his coffee for quite some time.
Apart of the cooking method, the coffee itself requires some time before it is ready to drink. This is because after poured in the cup, Greek coffee is still a mixture of ground coffee and brewed coffee. Thus, the ground coffee requires some additional time to settle down.
